WINEMAKING | After soft pressing the grapes are fermented without skins in concrete vats at a controlled temperature (60%) and in wooden barrels (40%). |
AGEING | This wine ages in French oak 500-L tonneaux for about 10 months, before being bottled. For the whole period the wine remains on the fine lees, which are stirred regularly to bring out more body and complexity. |
